# Method:

- Cream together butter and brown sugar in a large bowl until light and fluffy. Incorporate molasses and egg, mixing thoroughly. In a separate bowl, whisk flour, spices, baking soda, and salt. Gradually combine dry ingredients with wet, forming a dough. Divide into two discs, wrap in plastic, and refrigerate for at least one hour.
- Preheat oven to 350°F. Roll dough out to 1/4 inch thickness. Using templates or cookie cutters, cut out panels for walls, roofs, and doors. Transfer to parchment-lined baking sheets and bake for 12 to 15 minutes until firm. Allow pieces to cool completely.
- Beat egg whites and cream of tartar until foamy. Gradually add sifted powdered sugar, continuing to beat until stiff peaks develop. Transfer icing to a piping bag for assembly.
- Lay out all gingerbread pieces, candies, and decorations on a large serving board. Position bowls of royal icing and small spatulas or piping bags nearby for easy access.
- Invite guests to construct mini gingerbread houses using the pieces, royal icing, and various candies for decoration.
- Sprinkle shredded coconut over the board to create a snowy effect. Optionally, add fresh berries for color contrast.
- Present as a festive centerpiece and enjoyable treat.
